I, like you, had phimosis as well and I decided I didn't want to lose my foreskin so I began the stretching excersizes. At first I kind of got lazy about it, so things got tight again. But, eventually I stuck with the stretching every day. Even modified my masturbation technique to help stretch the skin out further. In total, when I was serious about it, it only took about a month to notice a huge difference in how far I could retract. I started with a dime sized hole, it was quite tight, and after a month I could retract fully while flacid. Then I guess about a month later I was able to retract completely while erect.
The important point behind my story is that stretching DOES work. Your sucess just depends on how often you stick with it. There is a steroid cream you can use to help speed things along but unless you have terrible patience I don't think it's necessary. I also don't like the idea of putting creams on an area unless I absolutely must. But that's me, and you may think otherwise.
I understand the reason behind your second question, mainly because I remember asking myself the very same thing. Healthy sex is very possible with phimosis, but certain problems can arise. I think the very feeling itself of having your foreskin retracted and being inside a woman is a good enough reason as any to whether or not the stretching is worth it. Sex, for me, is a lot more pleasurable now that my head isn't always covered up. Ditto for masturbation. I'm sure you think now that any contact with the actual glans of your penis is painful, but this does go away with the stretching excersizes. It even becomes quite pleasurable. I promise.

Ok, maybe a bit extreme in this instance but in some ways it's true. Nobody can answer this kind of question for you. I believe that you will be much happier with a fully retractable foreskin. I also believe that you will be glad that you put the effort into something and were able to see positive results that you can enjoy for the rest of your life. I'm not a doctor, I just speak from personal experience. But again, this is your decision and there are a lot of guys out there with phimosis that live perfectly normal sex lives and are completely happy.
