It is no doubt composed of the otherwise unwanted bits of meat, such as cartilage and tendon, but as long as it does not contain substantial amounts of cholesterol (such as offal), fat and salt, is it most likely quite good in the nutritional sense. In fact, as I was pointing out, cartilage and not meat, contains certain quite important nutrients.
